Wanted to share this quick, easy and super delicious soup recipe with you!
It's a staple at our house, especially when the weather is chilly.
For 2 decent sized servings you'll need:
- 2 medium sweet potatoes
- 2 red peppers
-4 cups water
Here's what you do:
- Peel and cube your sweet potatoes. Boil in a large pot about 10 minutes until very tender.
-While that's cooking, roast your bell pepper right on your stove (I've only tried this on a gas stove). Turn each time until the skin begins to peel away and even burns a bit. I found it's easiest to do with tongs.
-After the bell peppers have been cooked all around, place under a towel for 10 minutes. Definitely don't rush this process, as it will save you time later.
-When the peppers have cooled, peel the skin off and discard.
-Remove seeds and chop.
-Add sweet potato (now drained and cooled) and bell pepper to a blender with water and seasonings and blend until smooth. The water can be easily adjusted based on how thick you'd like your soup.
-Transfer back to a pan and warm on med-low to desired temperature.
