I am obsessed with this soup!
It's perfect now that summer is near (sorta...) and zucchinis will be in season. You are not prepared for the zucchini recipes I will be throwing your way....
This is my absolute most favorite quick, easy, simple, vegan dinner recipe. It's creamy, without any actual cream! It takes just a few minutes to throw together and can be enjoyed hot or cold.
Here's what you need:
- 2 zucchini
-1/4c cashews (soaked for about 3 hours or boiled 10 minutes)
-Pinch of salt and pepper
-1 tbsp nutritional yeast
-Any of your favorite seasonings
-Aprox. 1 cup of water
Here's what you do:
-Wash, remove ends and slice zucchini
-Boil about 10 minutes until soft
-Drain and rinse with cool water
-Toss into a large blender with cashews (drained), salt, pepper, nutritional yeast, seasonings and water
-Blend until smooth!
You can add more (or less) water until you reach your favorite consistency.
One of the reasons I love this recipe so much is because you can't really go wrong. Add more stuff, add less stuff, adjust to your liking-it's so easy!
Finally, you can transfer the now blended soup back to a pot to heat up, or chill to enjoy cold. It's delicious both ways.
