We've had such a ridiculous adventure with our garden this year.
Half of what we've planted hasn't made it out of the ground, but that's because the other half has grown SO huge, it's dwarfing everything else.
Our latest find was almost certainly the world's largest zucchini. I'm not joking, this thing was the actual size of my thigh.
It was too big and magical to go into a soup, so I opted for something a little more epic.
Enter the not-so-mini vegan zucchini pizza bites.
This one is a little more labor intensive, but a super delicious, healthy alternative when you're needing that pizza fix.
Here's what you'll need:
-2-3 zucchini (or 1 ginormous monster piece)
-salt & pepper
-cheese of some kind. Here's what I used.
Here's what to do:
-Wash and slice zucchini into rounds (I went relatively thick so that they'd maintain a good crunch)
-Place directly on baking sheets
-Drizzle with oil, salt and pepper
-Broil on low for 3 minutes
-Flip and broil other side for an additional 3 minutes
-Broil a final time for about 5 minutes, until cheese is melted and browns slightly
